Easy One Pot Mushroom Curry (King Trumpets)
Ingredients
1 Pound King Trumpet Mushrooms
4 Tbsp Coconut OIl
2 Tbsp Butter
1 pack of Fresh Thai Basil
4oz Green Curry Paste
1 Sliced Green Bell Pepper
1 Inch Ginger finely chopped
6 Cloved Fresh Garlic Chopped
1 Jar Coconut Milk
1 1/2 Cups Chicken Stock (or Veggie Stock)
Salt & Pepper to Taste
🔪 Prep Steps
- Mushrooms: Cut Mushrooms and Bell Pepper and set aside.
🍳 Cooking Instructions
- Get a large pot hot with coconut oil
- Add in Trumpet Mushroom (with a little butter)
- Cook Mushrooms for 5-6 minutes until browned evenly.
- Add in Green Curry Paste, Ginger, Garlic, Sauté all together for about 3 minutes.
- Add in Bell Pepper Chicken Stock (or Veggie Stock)
- Add Coconut Milk and Thai Basil and let everything simmer on medium heat for about 10 minutes.
- Add in Salt and Pepper to taste.
- Serve on Basmati Rice, and enjoy!
