Easy One Pot Mushroom Curry (King Trumpets)

Ingredients

1 Pound King Trumpet Mushrooms
4 Tbsp Coconut OIl
2 Tbsp Butter
1 pack of Fresh Thai Basil
4oz Green Curry Paste
1 Sliced Green Bell Pepper
1 Inch Ginger finely chopped
6 Cloved Fresh Garlic Chopped
1 Jar Coconut Milk
1 1/2 Cups Chicken Stock (or Veggie Stock)
Salt & Pepper to Taste
🔪 Prep Steps
  1. Mushrooms: Cut Mushrooms and Bell Pepper and set aside.

🍳 Cooking Instructions

  1. Get a large pot hot with coconut oil
  2. Add in Trumpet Mushroom (with a little butter)
  3. Cook Mushrooms for 5-6 minutes until browned evenly.
  4. Add in Green Curry Paste, Ginger, Garlic, Sauté all together for about 3 minutes.
  5. Add in Bell Pepper Chicken Stock (or Veggie Stock)
  6. Add Coconut Milk and Thai Basil and let everything simmer on medium heat for about 10 minutes.
  7. Add in Salt and Pepper to taste. 
  8. Serve on Basmati Rice, and enjoy!
